Gimme your best Christmas cheats recipes?

  • With 2 young kids and a full-time job, I don't have time for the traditional Christmas cooking. I need recipes that are small on effort and big on compliments (from the in-laws). Thanks in advance.


  • The easiest thing is buy a turkey or ham from Luby's or another similar restaurant. They are very affordable and I hear quite good.

    Mashed potatoes - they now have those "steam and mash" potatoes available in the frozen food isle. You microwave steam them and then mash them and add the butter and milk, no skinning, dicing and boiling!

    Steamed vegetables - use a rice cooker or ziplock microwave steam bags to cook your fresh or frozen vegetables. It's a put them in and walk away process. Then toss them with butter and a little sugar for candied vegetables, or olive oil and herbs whisked together for herbed vegetables.

    Biscuits - the best is refrigerated crescent rolls. If you want to make homemade biscuits, use bisquick. The recipe is right on the box and you can spice them up by adding butter or cheese to the batter with melted butter brushed on top before baking. I sprinkle a little parsley on there too before baking. It's super fast to make homemade biscuits with bisquick.

    Green bean casserole is a super fast dish as well.
    1 can condensed cream of mushroom soup
    2 cans cut green beans, drained
    1/2 cup milk
    1 can french fried onions

    Stir together the soup, milk and green beans. Add 1/3 of the can of onions. Pour into a casserole dish. Bake at 350 for 25-30 minutes. Top with the other 2/3 of the french fried onions. Bake another 5 minutes until the onions are golden and casserole is bubbly.

    Waldorf Salad
    2 cup diced apples
    1 cup 1-inch julienne celery sticks
    1/2 cup broken walnuts
    1/2 cup mayonnaise
    1 tbsp sugar
    1/2 tsp lemon juice
    Dash of salt
    1/2 cup whipping cream, whipped or Cool Whip
    Combine apples, celery sticks, walnuts. Blend together mayonnaise, sugar, lemon juice and salt. Into this fold whipped cream. Add apple mixture into above; chill. Serves 6.

    If you serve cranberry sauce and the jelly is okay, slice it and then cut the slices with a fluted biscuit or cookie cutter to make it look nicer and possibly homemade.


  • buy the pre-made pie dough crusts instead of making it from scratch. buy the jarred fruit pie filling instead of fresh.
    stove top instead of from scratch (the cranberry kind is great!)
    deep fry your turkey it cooks in half the time and it's delicious.
